A friend recently moved and they forced me to clean out their pantry and take anything I wanted. Anything. Like a quart of pesto and a spare pasta machine I need to sell.

I decided one way to use some of the pesto was to make some crispy potatoes and rice fry the eggs in pesto instead of butter. This was a winning idea.

Total meal cost:
Eggs from our backyard.
Pesto free.
Sausage free.
Potatoes $1.
Peanut oil $1.

Cost per person: $1

    Gotta throw in some constructive criticism here: do not fry Pesto.

    Use a neutral oil to do the frying and get your texture and doneness, THEN top with pesto.

    Basil turns really acrid with any amount of heat above a boil. Same as oregano. Pine nuts also burn super easy and give everything a woody taste.

    Fry first, pesto later!

      Lets not forget the Parmigiano seprating its fat…I would use a pesto as a side, or mix with some mayo and yogurt (if not fresh) as dipping sauce.
